This sparkling wine from Spain has been enjoyed by generations of winemakers and drinkers alike. Originating in the Catalonia region, the spirit is made using a traditional method of production known as “metodo tradizionale.” The process dates back to the mid-19th century when Jose Raventos began perfecting the craft of sparkling wine production. Flavor

The main grape varieties used in the production of cava wine are macabeo, parellada, and xarel·lo; however, other grapes may be blended depending on regional variations. In order to create a sparkle, they then undergo a secondary fermentation process in the bottle. The resulting product has a light and refreshing taste with aromas of ripe fruit and brioche.

How to Drink It

Cava is typically enjoyed as an apéritif, but it also pairs nicely with fish dishes, white meat, salads, and pâté. It can be found in different styles such as brut nature (the driest style), seco (medium dry), and dulce (the sweetest style). It is best served chilled in a flute-shaped or tulip-shaped glass.
