Franciacorta

(18 products)

This is a complex, multifaceted sort with an Italian pedigree. Sip this drink and you'll feel like you're in the center of Rome or the narrow streets of Venice, enjoying the warm sun, the playful spirit of Italian women, and the beauty of incredible landscapes. Below, we'll tell you about the production process, varieties, and the most successful food pairings.

Basic Features

This type is produced in the Northern Lombardy region. The first mentions of it date back to 1277. Its sparkling version was also developed at the same time.

The product has been protected by the DOC since 1967 and the DOCG since 1995. The first company to produce it from organically grown grapes was Barone Pizzini. The vineyards where the grapes for this sparkling wine are harvested extend over 3,000 hectares.

How It Is Made

This is produced using the classic method of secondary fermentation. This technology is similar to that used to make white sparkling wine in France. The raw materials enter the workshop, where they undergo a soft pressing of the whole bunches. This is done using concentrated grape juice from the first pressing.

Primary fermentation takes place in metal tanks. A byproduct is naturally released carbon dioxide. Secondary fermentation takes place in a sealed bottle.

The bottle is aged on its lees for at least 18 months. The period depends on the specific style and grape variety. The bottles are placed horizontally and turned regularly.

Classification

There are several varieties of Franciacorta wine:

  • Franciacorta Millesimato. This is a vintage option that is aged on its lees for approximately 30 months. According to regulations, approximately 85% of the grapes used for this sparkling wine must come from a single vintage.
  • Franciacorta Bianco. This type is released for sale at least two years after the grape harvest. It is aged on its lees for approximately 18 months in glass containers. The longer the aging on its lees, the more intense the drink's flavor.
  • Franciacorta Rose. It features a complex production process. First, white and red grapes are vinified separately, then combined.
  • Franciacorta Satèn. This is a Lombardy-style variation with aromas primarily of ripe fruit, flowers, and nuts. A distinctive feature of this product is the reduced pressure in the bottle.
  • Franciacorta Riserva. It is aged in bottles for up to 60 months. One of the most popular type.

Depending on sugar content, it is classified as Demi-Sec (33-50 g/L), Sec (17-35 g/L), Extra-Dry (12-20 g/L), Brut (6-15 g/L), Extra-Brut (2-6 g/L), and Non-Dosato (up to 2 g/L). Most are produced as Brut, meaning they contain less than 12 grams of sugar per liter.

How to Choose

Pay attention to the grape variety, vintage, and type (Brut, Satèn, Rose, Millesimato). The production region is also essential; it should be indicated on the label.

Consider personal preference. If you prefer a softer, creamier taste, choose Satèn. If you prefer a drier, more neutral, choose Brut.

Pay attention to aging. The drinks that age longer have a deeper, more intense flavor.

Food Pairing

Like sparkling wine, it pairs beautifully with refined dishes. Here are the best pairings:

  • Franciacorta Bianco pairs well with roast veal and baked potatoes.
  • Franciacorta Satèn is best served with simple fish dishes.
  • Sommeliers recommend Franciacorta Rosé with baked polenta.
  • Franciacorta Millesimato pairs well with risotto, asparagus noodles, soft cheese, and capers.
  • Franciacorta Riserva beautifully enhances the flavor of seafood (oysters, shrimp, and mussels).

This alcohol beverage pairs beautifully with Italian dishes, cold meats, fruit desserts, almond cakes, and nut pastries.
