Alcohol by volume, percentage of ethanol.

What is ABV? ABV, short for alcohol by volume, is the worldwide standard measure of ethanol content in an alcoholic beverage, expressed as the volume of pure ethanol divided by the total volume of the solution, with both measured at 20 degrees Celsius (68 degrees Fahrenheit). On a wine label it appears as "% vol" or "% alc./vol.", and it tells you, at a glance, how strong the wine in the bottle actually is. In wine the figure typically sits between 5.5% and 16%, with most table wines landing in the familiar 12.5% to 14.5% band, while fortified styles climb considerably higher. Understanding ABV helps you anticipate body, warmth on the palate, and how a wine will behave alongside food.

How ABV Is Measured and Labeled

The definition is precise: the volume of pure ethanol divided by the total volume of the solution, both taken at 20 degrees Celsius. Temperature matters because ethanol is lighter than water, with a density of about 0.78945 g/mL, which is the very property that makes hydrometer-based measurement possible in the first place. Mixing ethanol and water also produces a small non-additive volume change, known as the partial molar volume effect, though the deviation from a simple volume fraction stays under 2.5%.

Different countries and traditions have used different conventions. In France ABV is sometimes still called degrees Gay-Lussac, after the chemist Joseph Louis Gay-Lussac, though that historical scale referenced 15 degrees Celsius rather than the modern 20 degrees Celsius standard. In the United States, spirits are also expressed in proof, which equals 2 times ABV, so a 40% ABV spirit is 80 proof. The United Kingdom used a 1.75 times ABV proof system until 1980, when ABV labeling officially replaced it.

ABV in Wine and Across Categories

In wine, ABV is essentially a story about sugar and climate. Yeast converts roughly 17 grams per liter of sugar into about 1% ABV, so warmer regions and later picking dates, which give riper grapes with more sugar, produce wines with higher alcohol after fermentation. Wine yeasts can ferment up to roughly 14 to 18% ABV before alcohol toxicity halts them, and specialty strains can reach around 20%. To go beyond that you need distillation or fortification.

That ceiling is why fortified wines such as Port, Sherry, Madeira, and Marsala typically land between 15.5% and 22% ABV — neutral spirit is added during or after fermentation. For comparison, beer usually runs from 2 to 10% ABV, most commonly 4 to 6%, while spirits range from about 35 to 95% ABV. Whisky, by law, must be at least 40% ABV in the United Kingdom, the United States, Canada, and the European Union.

Why ABV Matters When You Choose a Wine

ABV is one of the quickest signals you have about a wine's style before you taste it. A 12% Mosel Riesling and a 15% Napa Zinfandel are very different propositions, even before terroir or grape variety enter the conversation: lower-alcohol wines tend to feel lighter and more refreshing, while higher-alcohol wines bring more body, warmth, and viscosity. The same label may also simply say "alcohol" — it refers to the same measurement.

For pairing and serving, ABV is a useful planning tool. Lighter wines around 11 to 12.5% tend to flatter delicate dishes and longer meals, while wines at 14% and above stand up to richer food and bolder flavors. With fortified wines, the 17 to 20% range means smaller pours and a different role at the table — usually as aperitif or after dinner rather than as a main course companion.
