What is Sparkling Water? Sparkling Water is water containing dissolved carbon dioxide, either naturally occurring from geological processes or artificially injected under pressure. First produced artificially in the 1740s, it covers a whole family of drinks including club soda, seltzer, and sparkling mineral water. The dissolved gas reacts with the water to form small amounts of carbonic acid, giving the liquid its lively tang and that unmistakable prickle on the palate. For a wine shop, it is a foundational non-alcoholic option that cleanses the palate between tastings and stands in elegantly when something effervescent but alcohol-free is needed.
Origins and Early History
The story of artificial carbonation begins in England in the early 1740s, when William Brownrigg is credited with apparently first producing artificial carbonated water. A few decades later, in 1767, Joseph Priestley independently invented a method for carbonating water in Leeds by suspending water above a fermenting beer vat, capturing the rising CO2 in the liquid below.
Commercial production followed quickly. Thomas Henry built the first factory for large-scale carbonated water production in Manchester in 1781, and in 1783 Johann Jacob Schweppes founded the Schweppes company in Geneva to sell bottled soda water commercially. Within a few short decades, sparkling water moved from a chemist's curiosity to a recognizable consumer product still on shelves today.
How It Is Made and What It Contains
Modern industrial production injects pressurized carbon dioxide into chilled water, since lower temperatures and higher pressure both increase how much CO2 the water can hold. Once dissolved, the gas reacts with water to form small amounts of carbonic acid (H2CO3), the source of that characteristic sharpness. The typical pH of carbonated water lands between 5 and 6, making it more acidic than apple juice but far less acidic than stomach acid.
Many sparkling waters also carry added or naturally occurring minerals such as sodium chloride, sodium bicarbonate, potassium bicarbonate, potassium sulfate, or sodium citrate. These salts soften the perceived acidity and help mimic the profiles of naturally sourced mineral waters, shaping mouthfeel as much as flavor.
Styles and Practical Notes
The category splits into a few clear styles. Club soda is carbonated with added mineral salts. Seltzer is carbonated water without added minerals. Sparkling mineral water is naturally sourced from springs that already carry dissolved minerals and sometimes natural carbonation. Commercial flavored sparkling waters round out the family. Tonic water is a related carbonated beverage but distinct, since it contains quinine and added sweeteners rather than being plain sparkling water.
On health, clinical evidence summarized by Wikipedia notes that carbonated water appears to have little to no impact on health on its own and does not aggravate gastroesophageal reflux disease. It is slightly more erosive to tooth enamel than still water, but only about 1% as corrosive as sugary soft drinks, which makes it a sensible everyday companion to wine tastings and food pairings alike.
