What is Baileys? Baileys is an Irish cream liqueur built from a blend of aged Irish whiskey, fresh Irish dairy cream, cocoa and vanilla, bottled at 17% ABV. Launched in 1974 by Gilbeys of Ireland, it was the world's first commercially successful cream liqueur and effectively created the category now known simply as Irish Cream. The brand is owned and produced by Diageo, sold in more than 160 countries, and remains the top-selling liqueur on the planet. Though widely imitated, Baileys is still produced and bottled exclusively in Ireland, which gives the original its distinctive character.
Origin and Production
The recipe was devised in 1971 by advertising executive Tom Jago, working on a brief to create a new drink with an Irish identity. The name was borrowed from Bailey's Bistro on Greek Street in Soho, London, and three years later the finished liqueur went on sale under the Gilbeys of Ireland label. It was the first time anyone had managed to stabilise dairy cream with a spirit base at commercial scale, a technical breakthrough that opened up an entirely new category of drinks.
Production today is split between two Irish sites: Nangor Road in Dublin and Mallusk in County Antrim, with the iconic glass bottles made nearby at the Encirc plant in Derrylin, County Fermanagh. The operation absorbs around 200 million litres of fresh Irish milk every year, drawn from local dairy farms. Alongside cream and whiskey, the blend contains cocoa, vanilla, sugar, a vegetable oil emulsifier and a touch of caramel. Diageo guarantees a shelf life of 24 months from production, opened or unopened, which is unusual stability for a dairy-based drink.
Flavours and How It's Served
The Original remains the benchmark, but the range has expanded considerably and now includes Chocolate, Strawberries and Cream, Pumpkin Spice, Mint Chocolate, Creme Caramel, Espresso Creme, Hazelnut and Birthday Cake, plus non-dairy almondmilk versions for vegan and lactose-free drinkers. Each variant keeps the silky texture of the original while pushing the flavour profile in a specific direction.
Baileys is most often served simply: neat, over ice, or poured into hot coffee as a quick after-dinner drink. It also works as a building block in cocktails such as the B-52 and the Mudslide, and as an ingredient in desserts, cheesecakes and tiramisu. The cream content means the bottle is best kept cool, out of direct sunlight, and shaken gently before pouring once it has been open for a while.
