Brewer's Wort
Sweet liquid from mashing before fermentation.
What is Brewer's Wort? Brewer's Wort is the sugar-rich liquid extracted during the mashing stage of beer and whisky production, carrying the fermentable sugars and proteins that yeast will later convert into alcohol. It is the raw material of fermentation, drawn from milled malted grain steeped in hot water until enzymes break starches down into maltose and maltotriose. Alongside those sugars, wort holds amino acids that feed the yeast and complex proteins that shape body, flavor, and head retention in the finished beer. The same liquid sits at the heart of whisky as well, since both drinks share the mashing-and-fermentation foundation before whisky takes the additional step of distillation.
From Grain to Sweet Wort
Production begins with milling malted barley, or sometimes another cereal, to crack the husks and expose the starch within. The grist is then steeped in hot water in a process called mashing, where carefully chosen temperature rests wake up different enzymes in turn. Proteases work at 49 to 55 degrees Celsius, beta-glucanase near 60 degrees, and the crucial starch-to-sugar conversion happens between 65 and 71 degrees Celsius.
Once conversion is complete, the brewer raises the temperature to roughly 78 degrees Celsius for mashout. This step denatures the enzymes and thins the wort so it flows cleanly during lautering, the stage where liquid is separated from spent grain in a mash tun, lauter tun, or mash filter. Lautering runs in two phases: an initial wort run-off followed by sparging with hot water to rinse the remaining sugars from the grain bed. The clear, sugary liquid that emerges is known as sweet wort, sometimes called green or unfermented wort. Adjunct grains such as oats, wheat, corn, rye, or rice may be folded in alongside the malt to build specialty styles or moderate cost.
The Boil and Onward to Fermentation
The sweet wort then moves to the kettle for a boil that typically lasts 45 to 90 minutes. Boiling sterilizes the liquid, drives off unwanted volatiles, precipitates proteins, and isomerizes the alpha acids in hops so their bitterness becomes soluble. Once hops enter the equation, the liquid is no longer sweet wort but hopped or bitter wort.
Hopping usually follows a three-stage schedule. Bittering hops are added early and boiled for 60 to 90 minutes to extract resinous bitter compounds. Flavoring hops join about 15 minutes before the end of the boil, while finishing or aroma hops go in at or just after flameout to preserve their delicate volatiles. When the boil is finished, the hot wort is cooled rapidly to a temperature suitable for yeast, transferred to a fermentation vessel, oxygenated, and pitched with yeast. From that moment, the wort begins its transformation into beer, or in the case of whisky, into the wash that will feed the still.
