Beer Foam

What is Beer Foam? Beer Foam, commonly called the head, is the frothy layer of carbon dioxide bubbles that forms on top of a freshly poured beer. It is held together by malt-derived proteins, hop compounds, and traces of yeast, all of which work in concert to give the cap its body and persistence. Far from being a cosmetic flourish, the head shapes how aromas are released, how the beer feels on the palate, and how drinkers judge the overall quality of the pour.
How the Head Forms
The bubbles themselves are CO2, generated either naturally by brewer's yeast as it metabolizes sugars during fermentation or added later through force carbonation. When the beer is poured, that dissolved gas escapes and rises through the liquid, gathering at the surface as foam.
What turns those bubbles into a stable cap is chemistry. LTP1, a lipid transfer protein activated during wort boiling, is the primary driver of foam formation, while Protein Z is largely responsible for how long the head lasts. Hordeins from malt and iso-alpha acids from hops cross-link with these polypeptides, making the foam more rigid, clingy, and resistant to collapse. Foam-stabilizing polypeptides are grouped into five categories by hydrophobicity, and the more hydrophobic they are, the more durable the foam they build.
Why the Head Matters
A good head is a working part of the beer, not just decoration. It concentrates volatile aromas and releases them as you drink, contributes to the perception of mouthfeel, and provides a visual cue that brewers and bartenders rely on as a quality indicator. Lacing, the pattern of foam that clings to the glass after each sip, is one of the most telling signs of a well-made, well-poured beer.
Foam destabilizes through two parallel processes: gravitational drainage, where liquid trickles out from between the bubbles, and Ostwald ripening, where gas diffuses from smaller bubbles into larger ones. Swapping CO2 for nitrogen, as in Guinness-style nitro pours, slows both mechanisms and yields the dense, creamy, long-lasting head associated with stouts on tap. Wheat-based beers also produce larger and more persistent heads than barley-only beers thanks to their different protein composition. Interestingly, research suggests the head may even serve a functional role, dampening liquid sloshing as a glass is carried.
Glassware and Service
Few things destroy a head faster than a dirty glass. Residual oils, grease, or detergent film disrupt bubble nucleation and collapse the foam within seconds, which is why dedicated beer glassware is rinsed thoroughly and often kept separately from other drinkware.
When tasting, it helps to know the basic vocabulary. The head is the foam cap itself; the collar is the residual ring that sits just above the liquid; lacing refers to the foam clinging to the glass walls after sipping; and retention describes how long the head holds together. Together these markers tell you a great deal about the beer, the pour, and the glass it was served in.
