Crown Cap

Metal cap used to seal Champagne during second fermentation.

What is Crown Cap? A crown cap, also known as a crown cork, is a metal closure used to seal sparkling wine bottles during the second fermentation in the traditional method. It holds a small plastic insert called a bidule, which traps the yeast lees deposit before disgorgement. While most people associate crown caps with beer bottles, the version used for Champagne and other sparkling wines is slightly larger and engineered specifically for high-pressure aging on the lees. It is the workhorse closure behind nearly every bottle made by the methode traditionnelle today.

Origin and History

The crown cork was invented and patented by William Painter in Baltimore in 1892, the same year he founded the Crown Cork & Seal Company. Painter designed the closure as an inexpensive single-use item, with a thin cork liner pressed inside a metal cap whose crimped flutes locked tightly under the bottle's lip. When his original patent expired in 1909, competitors flooded the market, and by 1923 the crown-finish bottle had been standardized industry-wide.

The cork liner remained in use for decades before being replaced by plastic in the 1950s. As sparkling wine producers searched for a cheaper, more reliable alternative to traditional cork stoppers for second fermentation, the crown cap proved ideal: it delivered a gas-tight seal at a fraction of the cost, and it was never meant to leave the bottle in the consumer's hands.

Role in the Traditional Method

In the methode champenoise, the blended base wine is bottled with yeast and sugar — the liqueur de tirage — and sealed with a crown cap for the second fermentation. Inside the bottle, the cap holds a bidule, a hollow plastic cylinder that captures the yeast lees as the bottle is gradually tilted neck-down during riddling, or remuage.

This combination is what makes the method work. The crown cap retains CO2 pressure as the wine builds its mousse, while still allowing the slow, controlled micro-oxidation that defines proper bottle aging on the lees. At disgorgement, the neck of the bottle is frozen, the crown cap is pulled off, and internal pressure ejects the frozen plug of lees before the final dosage and the permanent cork are added.

Specifications and Materials

The standard sparkling wine crown cap measures 29 mm across — larger than the 26 mm cap used on beer bottles — to fit the thicker, reinforced neck of a Champagne bottle. They are produced in steel, steel-aluminum alloys, or iron, and are paired with specialized liners engineered for the pressures and timeframes of Classic Method fermentation.

Manufacturers such as Pelliconi offer dedicated profiles for sparkling wine, including the Profile P103 with the Obturateur DAP, as well as the Opercule liner that integrates the lees container directly into the cap. These purpose-built closures are why the humble crown cap, originally designed for soda and beer, has become an indispensable piece of equipment in the production of fine sparkling wine.
