Dry Hopping
Adding hops after fermentation for aroma.
What is Dry Hopping? Dry Hopping is a brewing technique in which hops are added to beer after the wort has cooled, typically during or after primary fermentation, rather than during the boil. Because the hops are never boiled, their alpha acids are not isomerized, so the method contributes vivid aroma and flavor while adding only minimal bitterness. The earliest scientific documentation appears in Horace Tabberer Brown's 1893 paper for The Brewers Guardian, but the practice largely vanished from mainstream brewing in the 20th century and was revived in spectacular fashion by the modern craft IPA movement.
How the Technique Works
Dry hopping relies on a simple principle: heat is not required to release a hop's volatile aromatic compounds. Brewers select aroma-focused varieties, which typically carry a lower alpha-acid concentration of around five percent and are prized for their essential-oil profile rather than bittering potential. When these hops steep in cool fermenting or finished beer, their oils and resins dissolve into the liquid, layering on grapefruit, pine, tropical fruit, or floral notes depending on the variety.
The essential-oil composition varies significantly between hop varieties and even between harvest years of the same variety, which is why two batches of the same beer can smell noticeably different from one season to the next. Brewers often combine multiple varieties or stage additions at different points to build a more complex aromatic profile.
History and the Craft Revival
The phenomenon was first studied rigorously by Horace Tabberer Brown, whose 1893 paper On Certain Functions of Hops Used in the Dry-Hopping of Beer observed a continued, secondary fermentation in dry-hopped cask beers. Brown's experiments showed that steaming the hops eliminated this effect, proving an enzymatic cause rather than wild yeast or residual sugars. The phenomenon is now known as hop creep, in which diastase enzymes in the hops convert unfermentable dextrins into fermentable sugars in the presence of active yeast, leading to over-attenuation, excess CO2, higher ABV, and potential diacetyl spikes.
Through the 20th century, post-fermentation dry hopping largely disappeared from mainstream brewing as industrialization favored shelf-stable, standardized products. Aggressive dry hopping returned with the craft beer movement, and New England IPA and hazy IPA brewers now routinely use approximately two to four pounds of hops per barrel, sometimes more.
Biotransformation and Modern Practice
A key technique in contemporary hazy and New England IPA brewing is dry hopping at high krausen, the peak of active fermentation. Active yeast can enzymatically modify hop-derived compounds in a process called biotransformation, converting molecules such as geraniol and free thiols into more tropical and fruity aroma compounds. Dry hopping at this stage also reduces the risk of cold-side oxidation, one of the main drivers of its adoption in this style.
Dry hopping is most strongly associated with India Pale Ale and other heavily hopped styles where aroma is the primary feature. For drinkers used to wine, it is a useful parallel to think of dry hopping as the brewer's equivalent of choosing an aromatic varietal or finishing a wine on its lees — a deliberate choice that shapes the nose and finish far more than the bitterness or backbone of the beer.
