How It Is Made
Blanc de Blancs production strictly adheres to the traditional method of producing all champagnes. Only 100% Chardonnay grapes are used for its base wine.
The process begins with pressing the grapes and undergoing primary fermentation to produce a still white wine. Secondary fermentation then occurs in the bottle, creating the bubbles. To initiate this, a small amount of yeast and sugar is added to each bottle. The yeast begins to break down the sugars, releasing CO2. Specialists use special bottles that can withstand this pressure.
Once the yeast has completed its work, it dies. The product remains in contact with dead yeast cells for a long time, which creates its complex texture.
Blanc de Blancs is produced in a dry, cool style, so very little sugar is added at this stage.
