The famous hard cheese from Beppino Occelli, which is made from the milk of cows and goats grazing free-range in the Alpine meadows.
The cheese is aged for about a year and a half. Then it is wrapped in chestnut leaves and aged for some more time, as a result of which it acquires a distinct and exceptional taste with forest notes.
