Compatibility

The champagne is excellent as an aperitif and also pairs wonderfully with fish dishes (especially sea bass and sea bass), fried artichokes, grilled vegetables and black caviar.

Color

The champagne displays a brilliant pale gold colour with an elegant, persistent perlage.

Scent

The aroma of the champagne greets with hints of lime blossom, through which the ashy minerality so typical of Dom Perignon comes to the fore. Upon aeration, notes of dried fruit, candied raspberries and figs emerge. Fresh nuances of lemon verbena, white pepper and rosemary take over for a moment before plunging into spicy touches of spice and liquorice root.

The taste of champagne is enveloping, generous, structured, deep, amazingly echoing the nuances of aroma, with juicy acidity and a refreshing, persistent aftertaste with subtle bitterness and salty iodine nuances.
