Dom Pérignon Vintage 2017 was born under tension. The year unfolded in three contrasting sequences — a mild beginning, then 12 frost days in March that reduced yields, followed by a hot and dry summer that concentrated sugars in the remaining grapes to levels not seen since 2000. Late August rains changed everything, demanding precise harvesting decisions to save the finest fruit. The result is a Champagne of unmistakable duality: opulence and edge, roundness and straightness, generosity and discipline — all reconciled in a single expression.
The mineral tension that defines Dom Pérignon's signature is present here in its most acute form, animated by maturities of extraordinary richness yet kept in constant balance. The wine feels like a substance in zero gravity — fluid, pulsating, whirling — finding its resolution on candied yellow citrus skin, springing up like lightning with the seduction of a moving smoothness.
On the nose, a dreamlike world of fragrances unfolds: petrichor, warm and fresh simultaneously; the heady scent of jasmine; the complex touch of candied zest, at once vegetal and fruity, soft and grainy. On the palate, the duality continues — bitterness and acidity, sweetness and tension — all woven into an impression of soft gushing, of evening perfumes intense and mysterious. At the table, Dom Pérignon 2017 calls for bold culinary concepts: its marine vegetal character, tinged with gourmet and fleshy notes, finds its ideal expression alongside roasted langoustine, abundant floral foams and the pungent freshness of ginger.
