The aroma offers a wonderful concentration of toasted wood, replete with a typical powdery character that reminds us of the heyday of the navy. The heart of rum is vast and generous. It's filled with concentrated candied exotic fruits encased in walnut shells like little flavor bombs.
Taste
The full range of Demerara style is evident on the palate from the start. A toasty wood note with a licorice accent captures the palate and coats it with caramel encrusted with pecans and vanilla. The toasted side then reveals a few charred nuances bordering on black coffee. The fruit takes over again in the form of jammy taken to the extreme. A good handful of cloves was also thrown into the copper pan.
