Description
Compatibility
Pairs especially well with an aged cheese such as Comté, or with butter-poached lobster tail and hazelnut sauce.
Color
Intense golden color with coppery tones, with fine, elegant bubbles and a delicate mousse.
Scent
Great complexity, reminiscent of old Blanc de Blancs, with a wide range of aromas of caramelized nuts, candied fruits, dried spices, mocha and dried apricots, followed by notes of toasted bread, vanilla, brioche and tarte tatin. A subtle hint of anise lingers at the end.
Taste
An initial burst of freshness, with good concentration, meaty texture and creaminess. Balanced acidity with notes of Mirabelle, plum and marmalade.
