Description
Compatibility
With food, the superb creaminess and aromatic complexity lend the wine bold, vibrant pairings with foie gras, sweet and savoury cured meats, the richest cheeses, washed rind cheeses.
Color
The color is wonderfully warm, reminiscent of very old champagnes.
Scent
The first aromas are powerful, with cherry jam, warm spices (turmeric), almond and maraschino, against a background of meat juices providing depth. The expression then becomes subtler and more complex: chocolate, preserved orange peel, cherries in eau-de-vie and quince jelly, with a hint of cinnamon, and then, gradually, a touch of classic rancio.
Taste
In the mouth, very soft and delicate, we are immediately captivated by its delicate, creamy texture. This fullness of flavor is confirmed during the tasting, and then gradually the subtle character of this ratafia refreshes the overall impression. This late-summer sweetness reveals delightful aromas of dried apricot, cocoa, and cherry. The finish is long and clean, with a pleasant acidity that leaves the mouth completely clean and fresh.
